Beef, Zucchini and Spinach Enchiladas
Is there really a more beautiful sight?
I am so obsessed with this recipe and I hope you will be, too! These are Beef, Zucchini and Spinach Enchiladas, and they are equal parts creamy, cheesy, spicy and dreamy.
Every now and then (read: fairly often) I get these random dinner cravings that will haunt me for days and days until finally I am speeding down to the grocery store to whip it up for dinner. This week, that craving was enchiladas! Who would have thought in the second week of May, when the sun is supposed to shining and spring fever is supposed to be upon us, I'd be craving this ultimate comfort food?!
Well, here in Boston the weather has been every bit as confusing. Warm and sunny in the morning, gray and cool in the evenings. To deal with this, I decided to load up my rich and wonderful enchiladas with one of spring's best vegetable bounties - zucchini!
When I make enchiladas at home, there are a few basic components I hardly ever change. First, I like to use whole wheat flour tortillas. There are two reasons for this - first, they have just enough extra girth compared to their white counterparts and are far larger and more pliable than corn tortillas, making them the perfect vessel for chunky, rich, saucy fillings. Second is, when using the taco size, I find that 6 enchiladas perfectly fill up my 9x13 pan. The other thing I always do is make a homemade enchilada sauce, usually a red sauce, that is so so easy it would be foolish to use those canned sauces from the store! Not only does this guarantee that the spice level is up to snuff for my family, but it also means I know exactly what my enchiladas are swimmin' in, and that is such a win-win these days!
As for the creamy and cheesy factor, this particular batch of enchiladas is not lacking in any way. If I may, a bit of cream cheese (*heart eyes emoji*) and sour cream get stirred into our beefy filling (which also happens to be PACKED with vegetables but trust me you could hardly tell). Then to top it all off - grated. pepper. jack. cheese. So much yes! No cheese melts as beautifully as a jack cheese, and the extra kick from the peppers in the cheese balances everything just right.
This makes 3 servings of 2 enchiladas each, that is if you're willing to share. If you snuck a third roll, your secret is safe with me - I know, they are impossible to resist.

Crock Pot Italian-Style Beef with Cheesy Polenta
I adore this dinner. Simple, slow-cooked, tangy, and cheesy.
These are adjectives to live by!
Are you, like me, a fool who forgets all about her beloved Crock Pot in the summer? Why do we neglect the one device in our kitchen that cooks our food entirely without an oven?! Well today, we are fixing this problem.
This Crock Pot Italian-Style Beef with Cheesy Polenta is familiar yet intriguing. Comforting Italian flavors like oregano, parsley, and tangy crushed tomatoes meet boneless chuck steak, make a wonderfully rich ragu as they simmer away while we are at work, THEN get piled high atop a polenta packed with garlic, mozzarella cheese and cracked black pepper. What's not to love?
Oh, I nearly forgot, if you--this time, unlike me--are handy with your summer garden and find it overflooowing with fresh basil, please please PLEASE tear up a bunch and throw it on top. Please? Thank you.
So, here's how this all goes down:
The night before your delicious dinner: Set out your Crock Pot/slow cooker, the exact spices you need, a can of tomatoes, and honey so you don't have to fumble in the pantry early in the morning. Chop an onion and a clove or two of garlic, then stick them in the fridge in a zip top baggie.
The morning of: Dump onion, garlic, tomatoes, spices, honey, and olive oil in the bowl of your slow cooker. Whisk until combined, then nestle in the steak. Turn on low, go live your life for 8 hours.
Just before dinner: Prepare the most delicious, creamy polenta known to man. Shred up your beef. EAT!
It's meals like this that remind me why I l.o.v.e. food! Let's eat.

Beef and Corn Enchilada Spaghetti Squash Boats
Woohoo!! This is an Amazing Dinner Alert!!
There it is. Right up there.
Spicy, cheesy, beefy - these are a few of my favorite things.
These Beef and Corn Enchilada Spaghetti Squash Boats are a wonderful lightened-up alternative to one of my favorite comfort foods. I could eat these every week! Spaghetti squash makes the perfect vessel for homemade enchilada sauce, lots of cheese, crunchy corn and hearty ground beef.
The best part about this meal, besides the deliciousness of it all, is that it can be customized in any way to your tastes. Lighten things up more with shredded chicken or ground turkey; make it entirely vegetarian by stuffing these with chopped cauliflower; perhaps you just want lots of cheese, in which case you can take out the beef, add some black beans and extra cheddar.
No matter how you stuff it, I'm sure you're going to love it.

Crockpot Harvest Beef and Barley Stew
I have your new favorite Crockpot dinner ready to go! If you're overwhelmed at the thought of a full 24+ hours of cooking for Thanksgiving, this is a perfect recovery meal (that is better than take-out!)
This Harvest Beef and Barley Stew is the perfect set it and forget it meal that is packed with warm, comforting fall flavors. I love how just a few updates on a classic recipe make this stew feel totally new again!
If you're wondering what exactly makes this a "Harvest" stew, it's really quite simple! I added a couple of small diced sweet potatoes, a few dashes of cinnamon, a dash of nutmeg, and chopped fresh rosemary. The sweetness of the potatoes and cinnamon pair well with the tang of tomato soup and the saltiness of the beef broth to create glorious soupy balance!
If food were blankets, this stew would be the biggest, warmest, flannel-iest blanket you could imagine!
The recipe as written includes one teeny, tiny extra step that I think truly makes a difference in the depth of flavor - dredging the beef in flour and browning it in a cast iron pan prior to dumping everything in the slow cooker. This step is optional if you are really in a pinch, but if you have the time give this technique a try!

Mom's Beef Chili
It seems like every recipe I post from my mom becomes incredibly popular on Gas Stove Girl. I have a feeling this one here will be no different.
Previously from my mother's kitchen that you have loved: Lentil Soup, Baked Macaroni and Cheese.
Currently from my mother's kitchen you will soon love: Beef Chili.
My Mom's Chili is the number one chili in my heart. There is something about it that is better than some other chilis I have consumed. Our family does not really enjoy very spicy foods nor do most of us like beans (I actually like beans, but I digress).
This chili starts out as all good chilis should: with lots of ground beef, a diced onion, and a red bell pepper. A bunch of spices get added to the mix--essential spices--such as chili powder, cumin, oregano, basil, a pinch of sugar, and some salt. Just add diced tomatoes, tomato sauce, tomato paste and some Frank's Red Hot and BAM! Chili is served.
At my house, we've always enjoyed chili over rice, topped with lots of shredded cheddar cheese. This time around, I sliced up crispy Italian bread for dunking (and still topped it with plenty of cheddar!) Enjoy this chili in whatever way your heart desires! Perhaps some chili cheese fries just in time for the Super Bowl? JUST SAYIN'

Ginger Beef and Vegetables (Crockpot)
The entire month of April has HECTIC written all over it for me, and it is at times like this that I am eternally grateful for my Crockpot.
I feel like Crockpot dinners can get monotonous...it's always some kind of soup or stew or pulled pork. I've been searching the ends of the internet for some fresh takes on a typical slow cooker meal.
I stumbled upon this recipe from Fit Magazine and knew I had to give it a try. I love this combination of Asian flavors, and they pair so well with the tender beef round. I simply made adjustments to what vegetables I had on hand.
Ginger Beef and Vegetables is a fun yet simple meal. Nearly all of the prep can be taken care of the night before, with a few finishing touches made just before you eat. This meal is rich in protein and packed with flavorful veggies.
The night before, I pre-chopped all my vegetables and beef. The beef, carrots, scallions, and garlic get added to the bowl of your slow cooker. In a measuring cup, whisk together minced ginger, water, vegetable bouillon, and low-sodium soy sauce. Pour over the meat and carrots and stir to combine. Cover and refrigerate overnight.
In the morning, place the bowl in the body of the slow cooker and cook on low for 9 hours (or high for 4 1/2).
When you get home from work, turn the heat setting to high and stir in the bell pepper. Whisk cornstarch with a little bit of water and stir into the pot. Cover and cook for a bit longer. Remove the cover and stir in green beans (the frozen variety, thawed) and some lime juice. Cook until green beans are warmed and the sauce is to the desired thickness.
I served this beef over brown rice and garnished with additional scallions. This cured our craving for Chinese take out for half the cost and very little work! The beef was tender and packed with the great flavors of ginger and soy sauce. The crispy beans and soft carrots make this a great vegetable medley. The creamy sauce is so dreamy!
