Red Velvet Donuts with Cream Cheese Glaze

Did you know I love you? If you didn't, can I bake you donuts to show you that I do?

What about Red Velvet Donuts with Cream Cheese Glaze? I don't think I could possibly pack more love into a single recipe.

I have never been particularly good about posting recipes for certain holidays at specific times, maybe with the exception of Thanksgiving and Christmas. But today, I am going all in celebrating Valentine's Day with the whole internet! We are so worth it.

There are a lot of reasons I am obsessed with these donuts and you will be, too. Not the least of which is just how stinkin' cute they are considering tomorrow is Valentine's Day. BUT, please don't go away if you're bitter about this Hallmark holiday. These are just perfect to lift your spirits year round!

First of all, red velvet means cocoa powder and a good bit of it. Chocolate anything is my love language. Besides that, there is the fact that these are soft and pillowy and tender. They just melt in your mouth. The icing on the cake--no, literally--is that cream cheese glaze. What is red velvet without cream cheese frosting? It is nothing, don't even think about omitting it, please and thank you.

Let's get baking - breakfast is served!

Banana Oat Almond Butter Muffins

I have a weakness when it comes to breakfast. It's muffins. I love 'em.

There is a problem with muffins, you know...as delicious as they are, in general they are the antithesis of a healthy food. In excess, they are really bad for you.

These muffins, however. These muffins are moist and hearty and a bit better for you than your typical corn, pistachio, or chocolate chip muffin. They are every bit as delicious, the perfect compliment to a warm cup of a coffee.

Whip up a batch of these Banana Oat Almond Butter Muffins on Sunday evening and you will have a perfect on-the-go breakfast for the whole week. These muffins stay fresh for days and are incredibly flavorful!

There is no flour nor eggs in this recipe. Instead, we create delicious/amazing/tasty muffins using oat flour (AKA - rolled oats, pulverized in the food processor), almond butter, pumpkin puree, and mashed ripe bananas. Yum, yum, yum! Oh - extra bonus...no fancy equipment necessary here. Just a big bowl and a good fork for mixing.

Let's not delay any longer...

Sour Cream Coffee Cake

Rainy Saturday mornings usually means you'll find me vegging on the couch with a cup of coffee and the Food Network playing. I don't feel guilty about it, I just thought you should know.

As I have been on a bit of a baking kick lately, I thought I would also treat myself to a delicious homemade treat on this dreary day.

I used a leftover carton of sour cream to make a sweet and lovely loaf cake. Add a cinnamon and brown sugar streusel topping to that, and what I was left with was a sweet and moist coffee cake.

This cake is really tremendous. I had a very large piece for breakfast, and I'm not sorry I did. I'll probably do the same tomorrow.

The sour cream keeps the cake moist and not too sweet. I love the crunch on top from the streusel, too. In a way, the cake is also light and delicate. It's such a great combination of flavors and textures.

I used to LOVE those Hostess coffee cakes. The kind that came with 2 in a pack. I'd eat those for breakfast, I'd have them as a snack, they made a great dessert too. Now that I consider myself an adult, I usually try to avoid pre-packaged baked goods. Does any good REALLY come from those?

Well, good does come from my oven. And that goodness is in the form of a Sour Cream Coffee Cake. The adult Hostess snack of my dreams!
