Creamy Lemon Pasta with Roasted Salmon and Peas


What is it about a creamy, dreamy pasta dish that can turn a bad day upside down?


This particular recipe is exactly what I want to be eating right now. It's bursting with fresh lemon flavor, but at the same time it is the perfect comfort food dish thanks to a decadent bechamel sauce and buttery roasted salmon. We aren't diving head-first into rich wintertime casseroles, rather we're tip-toeing into what is (in my opinion) the best time of year for cooking. 



Let's talk about this Creamy Lemon Pasta with Roasted Salmon and Peas. Surely it is reminiscent of pasta carbonara, with a super creamy sauce (though not from eggs), a rich fatty protein (this time salmon over bacon), and little bursts from frozen peas. For the pasta, I used bucatini which I just love particularly for it's chewier, sturdy texture. It holds up extremely well to our cream sauce, which is made all the more irresistible on account of it starts with sauteed garlic and sliced leeks in a bit of butter and olive oil before finishing with a generous sprinkle of lemon zest and juice <3 


Oh, and by the way...the salmon? It is AMAZING on it's own, a dinner in and of itself. We are simply taking it to the next level by breaking it up and tossing it into this pasta dish. I roast the salmon skin side down on a sheet pan lined with parchment paper and drizzled with olive oil. Then, I generously season the flesh with salt, pepper, and dried thyme. Lay a few lemon slices over the top before baking and viola! Perfectly cooked, ridiculously simple salmon.

Baked Parmesan Risotto with Bacon, Peas and Cauliflower


Guys, I've missed you.


I am sorry to have been MIA for the month of February and now most of March. Work and exams required my full attention, but that attention has paid off. And now, just like that, I am back and ready to test out some fun new recipes with you.


You can probably tell from the quality that I snapped these photos really quickly before Cory and I sat down for Valentine's Day dinner (I know, I know. I made this on FEBRUARY 14th and I'm only NOW sharing it with you--awful!) Anyway, trust me when I tell you that despite the boring pictures, this risotto dish is so yummy!


This Baked Parmesan Risotto with Bacon, Peas, and Cauliflower is creamy and dreamy and so flavorful. It has all the delicious qualities of a traditional risotto without the task of stirring it constantly for 40 minutes. I love the combination of peas and bacon -- it's like this risotto is a nod to Pasta Carbonara! Roasted cauliflower adds a depth of flavor, while fresh leeks and crisp white wine cut a bit of that parmesan richness.


If you've been dying to make a risotto at home but aren't ready to tackle the constant stirring process, give this recipe a try. It is totally simple and foolproof, yet it is still elegant enough to serve to your special someone or a bunch of friends for a dinner party. All you need is an oven-proof pot, such as a dutch oven, and you are ready to roll.

How to: Make a Meal out of Annie's Mac and Cheese

The title of this post is so ridiculous I am already laughing. I had some other titles in mind. Something to the effect of:

"College Food Gone Wild"

"So What, There is Powdered Cheese Product in this Meal"

and "23 Year Olds like Boxed Mac&Cheese too!"

There is context to this. I promise. So when Hurricane Sandy was plowing her way up to the Northeast, I had a mini panic attack because Mommy and Grandpa weren't going to be here to make sure I had everything I needed in case of an emergency. It was just me, the cat, the turtle, and the boyfriend.

Have I never mentioned Angelo before? He is my Russian tortoise. I welcomed him into my family during sophomore year of college. He was our suite pet. He's hilarious. And his name is Angelo, which is also funny considering he is not a human.

Anyway, so it's the four of us. We made some spare water, took a candle inventory and made sure the two little flashlights we have had working batteries. Then I ran to the grocery store to get some non-perishable snacks. For some reason, I bought a family size box of Annie's White Cheddar Shells. I don't know what I was thinking or how I intended on cooking this in the event the power went out, but I got it.

I am currently in a pantry-clearing kick and so I decided last night that this purple box with bunnies on it had to go.


 I couldn't bring myself to just make the mac and cheese according to package directions, so I decided to dizzy it up a little bit. I had a lot of great veggies lying around as well, so what I went with was a Baked Veggie Mac and Cheese.


I have to say, this really ended up being a pretty flavorful dinner and it came together in no time at all. Better still is that you can take some of the basic principles here and apply it to a real homemade mac and cheese dish (like the buttery bread crumb topping). So next time you find yourself with a box of Mac and Cheese and no drunk person to make it for, try creating something better from it - I don't think you will be disappointed!
