Whole Wheat Cheddar Chive Biscuits


I made this biscuits in an effort to feel less guilty about eating biscuits. I wanted it to be OK for me to have a second biscuit. My life is so difficult.


I had a snow day on Wednesday and knew that the universe was telling me to make healthier but super delicious biscuit. Yes, the universe talks to me often--generally it wants to talk about biscuits.


Cheddar cheese and chives are a match made in heaven. Luckily I had both of those in my fridge along with some Greek yogurt, and there was a fresh bag of whole wheat flour in my pantry.


What came out of my oven later that morning are these Whole Wheat Cheddar Chive Biscuits. They are flavorful and nutty, a bit sturdy but certainly flaky like a traditional biscuit. The cheddar is sharp and the chives provide just the right amount of onion flavor. I kicked it up a notch by adding a generous amount of cracked black pepper.


These biscuits were the first things I baked using whole wheat flour, and I would definitely consider them a success. The Greek yogurt is tangy and acts very much like buttermilk in this recipe. I used a low fat yogurt, but I would imagine a non-fat yogurt would have the same result (please report back if anyone tests this out!)


Enjoy these biscuits for breakfast alongside scrambled eggs or as a tasty little sandwich vessel at lunch. You may also consider serving them alongside a big pot of chili, like my Mom's Beef Chili!

Eggnog Scones


One of my favorite parts of the holiday season is big glasses of thick, delicious eggnog. The warm flavor of the nutmeg with sweet egg cream. It represents everything that I love about Christmas time!


I was wondering what it might be like to bake with eggnog...would the eggnog lose its flavor? Because scones are so simple to cook and require very little finesse, I went to Pinterest to find the perfect eggnog scone. P.S. Follow me on Pinterest here!

I didn't want to invest in eggnog extract--I wanted a recipe that used the real stuff! These Eggnog Scones totally fit the bill.


The smell of nutmeg fills up your kitchen while these delicious, buttery, crumbly scones bake up. The taste of eggnog really comes through in every bite. The outside of the scones are perfectly golden and crispy, while the inside stays soft and tender. These are a great breakfast treat to bring to your family this holiday season!


If you're feeling wild and crazy, you could also drizzle an eggnog glaze on top of the scones. Mix together about a cup of powdered sugar with a few tablespoons of eggnog and a dash of nutmeg. Totally divine! I found the scones had a nice, light sweetness on their own, so I just enjoyed them straight up with a warm cup of coffee. Perfection!

Dark Chocolate and Walnut Pumpkin Cookies

I want to talk about cookies. I think now is as good a time as ever to have such a talk.

Cookies are so necessary. Always. That’s really all I have to say on the matter.


Ok, well really, there is more. I’m completely guilty of loving Oreos way more than a person should, particularly the double-stuffed peanut butter variety. I’m also guilty of feeling immense joy during Girl Scout cookie season. 18 boxes of thin mints, 20 boxes of samoas, and a tag along or 12 while you’re at it. I love a good store bought cookie. Who doesn’t?!

I also have a fear of baking. See my post on pink lemonade cupcakes for more on why…


I love, however, an easy recipe that takes some of that immense stress off of the baker (namely, me) and still yields a delicious sweet treat.

Enter boxed cake mixes (have all the real bakers of the world given up hope on me?!). These things are a good place to start for the not-so-advanced, burn savvy baker (again…me). Doctor them up a bit and, as long as you make your sweet treat with love, I don’t think anyone will object.


Fall flavors are in full swing – I can tell, because a LOT more people are walking around with Starbucks cups. I KNOW you have a pumpkin spice latte in there. I know this because I do, too. No reason to be ashamed. Pumpkin is delicious. So I wanted to make something with pumpkin.

The secret is definitely out on how to make an easy yet delicious pumpkin cookie.


I’m going to add dark chocolate chunks and walnuts to mine. That brings the total number of ingredients to 5.
